If you’re new to coconut flour, then hopefully we can help you to realise why it should become a food cupboard staple. You see, coconut flour is pretty unique and is ideal for those on gluten free and grain free diets.

What Is Coconut Flour?

Our raw and organic, Fair Trade coconut flour is created from dried coconut meat. This is then cold pressed to extract the oil and the meat, or kernel, that’s left is now known as ‘the white cake’. This cake is now pulverized, before being dried out at a low temperature (below 45C) and ground to produce a soft, fine powder, or flour.

Being unprocessed and unbleached, it retains its naturally creamy colour and coconutty aroma.

Why We love Coconut Flour

As with most things that are coconuts, coconut flour is packed full of goodness.

High in Fibre - the one thing most diet experts can agree on is that we need more fibre in our lives. Coconut flour has over 40g of fibre for every 100g serving.

Healthy fats - like coconut oil, coconut flour contains saturated fat, including medium-chain fatty acids, which have been linked to having certain health --benefits.

Coconut flour has all sorts of wonderful uses and is suitable for most diets. Our top tips for using it are:

Being high in fibre makes coconut flour quite absorbent, so we recommend leaving cake mixtures and batters for a few minutes before cooking. Add extra liquid or vegan egg if needed.

It’s a healthy addition to other flours in recipes and works well in both sweet and savoury dishes.

As with all flours, it’s a good idea to whisk or sieve coconut flour before weighing it out for your recipe.

Use it in your everyday foods. It’s a great way to increase your fibre and iron intake simply by stirring it into porridge, add to smoothies or pancakes, as well as using in recipes.

Fair Trade

Our coconut flour comes from the Philippines and, like all of our ingredients, is certified Fair Trade by the Fair Trade Sustainability Alliance (FairTSA).

The Fair Trade premium that goes back to coconut farmers is used to increase coconut production; improve the lives of the coconut farmers and their families; help the community; and enhance the environment.

Specifically, the money goes towards:

-coconut planting/replanting programmes
-student subsidy for children of coconut farmers
-a feeding programme for malnourished pupils
-life insurance coverage
-low-interest lending programme for farmers
-a calamity fund

Part of being Fair Trade also means that organic farming methods are adhered to for a sustainable and environmentally-friendly coconut production.

About the brand

When I was 18 months old I was diagnosed with coeliac disease. This is a condition where the gluten in wheat attacks your gut - gluten is insidious in a modern diet and is often used in the most obscure prepared foods.

My parents have told me that I was very poorly back then and it took some time to diagnose what was wrong.

What I have learnt from being coeliac is a better understanding of the importance of the quality of diet, not just for me but for all of us.

I believe that eating natural, unprocessed foods makes us healthier from the inside out.

In our quest for a balanced diet, there seemed to be a missing part to the jigsaw for healthy oils and fats.

This changed in 2007 when my family was fortunate enough to be introduced to coconut oil by a good friend Indra, from Hong Kong, who gave us the book 'The Coconut Oil Miracle' by Bruce Fife and a jar of organic coconut oil to accompany it. Finally, we had found a really healthy fat.

This includes the quality of our products and how they are grown; our charitable donations; ensuring an ethical supply chain; and eco-friendly packaging, all of which are certified, monitored and audited as follows:

 Soil Association:

  • Lucy Bee complies with the EU Organic Regulation
  • Lucy Bee also meets Soil Association’s own additional higher standards to ensure the highest possible standards of animal welfare, environmental and wildlife protection. 
  • Lucy Bee can confirm that the farmers, packers, food processors and organic retailers meet the organic standards set out by Soil Association.

Cruelty Free International/Leaping Bunny:

  • Lucy Bee does not and shall not conduct, commission, or be a party to Animal Testing of any cosmetic and/or household products including, without limitation, formulations and ingredients of such products.
  • Lucy Bee does not and shall not purchase any ingredient, formulation, or product from any third-party manufacturer or supplier that conducted, commissioned, or had been party to animal testing on said ingredient, formulation, or product. If a formulation, ingredient, or product is found not to comply with the standard, the company will replace it with an alternative that complies with the standard’s criteria or remove it from the product range.

Palm Oil:

  • Lucy Bee does not use palm oil in any of its products not even sustainable palm oil.
  • Lucy Bee does not use any ingredients that are derived from palm oil in any of its products.


  • Lucy Bee can confirm that we exclude, as far as is possible and practicable, all forms of exploitation of, and cruelty to, animals for food, clothing or any other purpose.
  • Lucy Bee products carrying the Vegan Society certification are fully compliant with the Societies rules and regulations.

Fair Trade:

  • Lucy Bee pays a 10% premium for the farm gate price of its products, which is used to benefit the local community for that product, in the form of sustainable community projects AND a fair wage and price for their products.
  • Lucy Bee gives 0.75% of its sales to the FairTSA to allow them to continue their work, including auditing and compliance of the Fair Trade scheme.
  • Lucy Bee can guarantee through its Fair Trade scheme no child labour and fair wages and contracts for all workers and that monkeys are not used to harvest the coconuts. 


  • Lucy Bee products are packaged in BRC Grade A plants in the UK and the Philippines.
  • Lucy Bee aims to use to totally eco-friendly packaging and reduce waste in all areas possible.
  • Lucy Bee use recyclable glass jars and BPA free lids with a recyclable, compostable and biodegradable easy peel label.
  • Lucy Bee use FSC card for their packaging which means everything is recyclable, compostable and biodegradable.
  • Lucy Bee have reduced waste and plastic by replacing old card trays and plastic shrink-wrap with outer cardboard boxes.
